Melanzane ripiene alla siciliana
Bakłażany w kuchni sycylijskiej wykorzystywane są w wielu daniach, można je smażyć, grillować, piec.
Ja bakłażany pokochałam kiedy zrobiła je pierwszy raz moja teściowa, przyznam mieszkając w Polsce nie jadłam ich zbyt często- mój błąd. Teraz bardzo często używam ich w swojej kuchni.
Dziś przygotowałam dla Was przepis na faszerowane bakłażany po sycylijsku, ten smak was powali, jeśli do tej pory nie byliście miłośnikami tego warzywa, OBIECUJĘ, że teraz zwariujecie na ich punkcie.
SKŁADNIKI
2 dość duże bakłażany
2 ząbki czosnku
100gr parmezanu +30gr do posypania
Łyżka kaparów
10 zielonych oliwek
6 pomidorków cherry
1 kromka zgrillowanego pieczywa
Łyżka pietruszki
125gr mozzarelli
Sól, pieprz, oliwa z oliwek
1. Bakłażany kroicie na pół, solicie i odstawiacie na ok 20min następnie płuczecie pod wodą i za pomocą łyżki wydrążacie środek, tak aby z każdej strony zostało ok pół centymetra
2. Resztę składników(oprócz mozzarelli) kroicie i wrzucacie do miski, dodajecie szczyptę soli i pieprzu
3. Środek z bakłażanów kroicie w kosteczki i podsmażacie na oliwie z oliwek ok 5-7 minut, dodajecie resztę składników i na małym ogniu mieszacie przez kolejne 5 minut
4. Do podsmażonych składników(na wyłączonym ogniu) dodajecie pokrojoną mozzarellę, wszystko mieszacie
5. Łyżką faszerujecie połówki bakłażana, posypujecie parmezanem
6. Piekarnik ustawiacie na 45 min 180 st
