Risotto uwielbiam, w każdej postaci, gości u mnie w kuchni przynajmniej raz w tygodniu. Niesłuszne jest myślenie, że risotto to danie zimowe i ciężkie, ja często robię risotto na wiosnę i w lato, wystarczą świeże, sezonowe warzywa i można wyczarować danie niczym z restauracji.
Na Sycylii w kwietniu zaczyna się sezon na świeży bób, trwa krótko dlatego często w tym okresie przyrządzam z nim dania, dziś pokaże Wam jak zrobić wiosenne risotto z bobem i wędzonym boczkiem.
Domowe, lekkie i baaardzo smaczne.
Jeśli lubicie bób i risotto tak jak ja to danie będzie spełnieniem waszych kulinarnych marzeń.

Risotto con fave fresche e pancetta affumicata
Składniki na 4 osoby
300 gr ryżu do risotto najlepiej carnaroli
100 gr wędzonego boczku
1kg bobu
100 gr parmezanu
1 cebula
1,5l wywaru warzywnego
100ml wina
Oliwa z oliwek, sól
1. Przygotujcie wywar warzywny, taki jak lubicie najbardziej
2. Ugotujcie i obierzcie bób
3. Na patelni podsmażacie pokrojoną w drobną kostkę cebulkę z dodatkiem oliwy z oliwek, po około 5 minutach dodajcie ryż (nie płuczcie go wcześniej, skrobia jest w risotto bardzo ważna) mieszając dodajcie wino i podsmażajcie jeszcze około 5 minut, aż alkohol wyparuje
4. Następnie dolewajcie po chochli wywaru, mieszajcie i tak w kółko, dolewacie chochlę i mieszacie, około 15 minut
5. Kiedy ryż będzie al’dente dodajcie wcześniej ugotowany i obrany bób, wędzony boczek oraz 50gr parmezanu, szczyptę soli i mieszajcie cały czas przez następne 5 minut, aż powstanie taka ładna kremowa konsystencja
6. Kiedy risotto jest już gotowe, nałożone na talerz posypcie go delikatnie parmezanem
